Singapore definitely has a mall culture when it comes to hanging out. We arrived at this Nando's in the middle of Bugis Junction mall at 8pm on a Sunday evening, and the shops were all open and full of people, and we got one of the last tables in the restaurant. Clearly the place wasn't staffed to cope with this Sunday night demand though, since no one came to greet us at the door, tables were covered in empty plates, and various things ran out while we were there like tissues and ice.

One quirk we noticed when ordering tonight is that you cannot order a burger, pitta or wrap without any sides here in Singapore. They also don't let you order sweet potato fries from the app, and apparently only at the till. After asking for mayonnaise last night and being told them didn't have any, I noticed that the sweet potato fries come with 'perinaise'. Intrigued, I ordered some after ordering our main courses, and this caused a problem when the food arrived since the perinaise was on a separate order. I asked the waitress for it, and she said it would come soon. I then saw her at the ordering desk and could see that all the orders come through in the order they are made. This meant she couldn't give me the mayonnaise until that second order came to the top of the list. In the end I had to ask the manager for the mayonnaise since my wedges were getting cold, and he quickly obliged.

Unfortunately the perinaise was nothing like the stuff at home, and basically a slightly sweet salad cream with a bit of peri spice in it. Still, it was better than chips on their own but only just. As for the rest of the food, I had a butterfly breast and it was the best thing I've had in Singapore so far - large, doused in sauce, very tender, and just the right amount of crispiness to the skin.

Maybe 1/5 is a bit harsh on the staff - if any read this, I'll add that this is just because the place was understaffed and clearly suffering for it. The staff looked very stressed and were trying their best to firefight the many issues in the restaurant.
